nixpkgs pins electron_40 at 40.10.5 which is EOL (nixpkgs blocks install)
and vulnerable to AIKIDO-2026-309397 (Improper Authorization, Pre-CVE).
Electron 41.9.1 is current, supported, and patched for all listed vulns.

- Add modules/apps/vesktop.nix with a targeted override: swap electron_40
  for electron_41 and strip the build's major-version guard. ABI is
  compatible (both electron 40 and 41 ship Node 24.x).
- Remove the vesktop override blob from packages.nix (dendritic split).
- Drop now-unused permittedInsecurePackages entry for electron-39.8.10
  from nix.nix.
